The taste and texture of coconut varies significantly depending on its age. 

Young Coconuts are harvested about halfway in their growing cycle, at about 6-8 months. Inside, The water is sweet and refreshing, with a slightly nutty flavor. The flesh is very soft and has a light coconut flavor.

Mature Coconuts are harvested a bit later on, at around 10-12 months of age.
The water in mature coconuts is less sweet, sometimes slightly bitter or more neutral in flavor. The meat is more firm, with rich and nutty coconut flavor. This is the coconut commonly used for cooking, baking, and making coconut milk.

Each stage of coconut has its unique culinary uses. Young coconuts are often enjoyed for their hydrating, sweet water and tender flesh, while mature coconuts are prized for their robust, nutty meat used in a variety of dishes.
